How We Prepare Dorada al Espeto at La Venus Restaurant
Selection of Fish
At La Venus, we use Golden Horn bream, a high-quality fish ideal for grilling due to its fatty, thick flesh. We also offer other options like sea bass and other types of ria fish, perfect for this traditional preparation.
Fish Preparation
Before skewering, the fish is shown to the customer. We remove the internal organs but keep the gills and scales intact. Small incisions are made in the fish's skin, and it's lightly seasoned with olive oil and salt, allowing the natural flavors of the fish to shine through.
The Speto Technique
We use a specially designed grill boat to cook the Dorada al Espeto. The angle of the skewer is adjusted based on the wind direction, ensuring even cooking. The skewer is placed vertically in the sand, allowing the heat of the olive wood coals to cook the fish perfectly.
Serving the Dish
