Ingredients for Spaghetti with Bolognese Sauce (Serves 4)

  • 400g fresh egg tagliatelle (or spaghetti)

  • 300g ground beef (for the meat sauce)

  • 300g tomato puree

  • 200g broth (beef or vegetable)

  • 150g pancetta (bacon, finely chopped)

  • 50g carrot (finely chopped)

  • 50g celery (finely chopped)

  • 30g onion (finely chopped)

  • Red wine (or dry white wine)

  • Milk (for extra creaminess)

  • Extra virgin olive oil

  • Salt and pepper (to taste)


Step-by-Step Instructions to Make Bolognese Sauce

Step 1: Prepare the Ingredients
Start by finely chopping the pancetta. Peel and finely dice the carrot, celery, and onion. These ingredients will serve as the base of your Bolognese sauce.

Step 2: Cook the Pancetta and Vegetables
Heat a little olive oil in a large skillet over medium heat. Add the pancetta and let it cook for a few minutes. Then, add the diced vegetables and cook until they soften and release their flavors.

Step 3: Brown the Meat and Add Wine
Add the ground beef to the pan and cook until browned, stirring occasionally. Pour in 1/2 cup of wine (red or white) and allow it to evaporate completely to intensify the flavor.

Step 4: Add Tomato Puree and Milk
Stir in the tomato puree and let it simmer for a couple of minutes. Then, gradually add 1/2 cup of milk, which gives the sauce a smoother texture.

Step 5: Slow Cooking for Rich Flavor
Slowly pour in the broth, covering the meat mixture. Let the sauce simmer for 2 to 3 hours over low heat, stirring occasionally and adding more broth as needed. Season with salt and pepper to taste.

Step 6: Cook the Pasta
Cook the tagliatelle (or spaghetti) in salted boiling water for 3 to 4 minutes if using fresh pasta. Drain and mix generously with the Bolognese sauce.
